Drawing on ancient China’s golden age of innovation, prosperity and cultural achievements, the Song dynasty-inspired Canto Jade blends refined aesthetics with modern takes on Cantonese cuisine, spanning such dishes as deep-fried salt-and-pepper eel presented atop a heated volcanic stone, a 24-hour-marinated char siu finished tableside in a show of whisky and flame, and crispy three-yellow chicken with scallion oil and mushroom sauce, an exercise in exquisite fragrance and texture. Best of all, Canto Jade brings back the iconic dim sum trolley service.
