Chef Zhang Yajun said Indian diners fell in love with Sichuanese food, rather than many other regional Chinese cuisines, because it is similar to Indian cuisine in the way it uses spices to create bold, exciting flavours. Over the years, chef Zhang has focused on creating innovative Sichuanese dishes that bridge local preferences in India’s financial capital.
